Lemon Chive Vinaigrette

Ingredients:
1 tsp lemon zest
Juice from 1 large lemon
1 clove of garlic, mashed to a paste
1 tsp honey
2 tsp Dijon mustard
0.5 tsp kosher salt
0.5 tsp ground black pepper
0.3 cup olive oil
3 tbsp freshly chives
Instructions:
1. Add lemon zest, lemon juice, garlic, honey, mustard, salt and pepper. into a bowl.
2. Whisk until salt is dissolved and honey is incorporated.
3. Drizzle in the oil slowly, risking until you get a nice emulsion.
4. Let sit at room temperature for at least 10 min.
5. Stir in chives immediately before using, so they don’t darken.
