Dairy-Free Lemon Aioli

Ingredients:

2 garlic cloves

1 large egg yolk

2 tsp fresh lemon juice


0.5 tsp Dijon mustard

0.25 cup extra virgin olive oil

3 tbsp vegetable oil


1. Mince/mash garlic with a pinch of salt.

2. Whisk together yolk, lemon juice, and mustard.

3. Combine oils and add, a few drops at a time, to yolk mixture, whisking throughout.

4. Whisk in garlic paste.

5. Season with salt and pepper. yoI
