Cilantro Chimichurri Sauce


This would be a great sauce to top grilled meats, but also makes a good salad dressing!


Ingredients:

0.75 cup cilantro leaves

0.25 cup parsley leaves

2 tbsp fresh oregano

2-4 cloves of garlic

1 tsp salt

0.25 tsp pepper

0.25-0.5 tsp red pepper flakes (depending on desired spice)

0.5 cup olive oil

2 tbsp red wine vinegar


Directions:

1. Combine cilantro, parsley, oregano and garlic in a food processor.

2. Transfer chopped herbs and garlic into a bowl.

3. Add salt, pepper, and red pepper flakes.

4. Add olive oil and vinegar.

5. Stir to combine.


Refrigerate if not using all. Must be used within a week.
