Keto Flat Bread

This sandwich includes Genoa salami, Boar's Head no-salt added ham, and a slather of Primal Kitchen's Chipotle Lime Mayo (www.primalkitchen.com) with two slices of this keto flat bread. It's become my new staple for a quick lunch, but you could use this flat bread for breakfast sandwiches, as pizza dough, or with some garlic/cheese with an Italian dish.


INGREDIENTS:

8 oz cream cheese

2 cups mozzarella cheese, shredded/grated

3 large eggs

0.25 cut parmesan cheese, grated

1 cup crushed pork rinds

1 tbsp baking powder

Herbs/spice to taste


DIRECTIONS:

1. Preheat oven to 325 degrees. Line baking sheet with parchment paper.

2. Place cream cheese and mozzarella in a large microwaveable bowl.

3. Microwave cheese on high power for one minute, stir, then microwave for an additional minute. Cheese should be fully melted.

4. Add egg, parmesan, pork rinds, and baking powder. Stir until all ingredients are incorporated.

5. Spread onto parchment paper lined pan. Bake for 15-20 min until lightly brown.

6. Turn heat off in oven and allow to cool in oven on the rack for 15min, then remove and allow to cool.

7. Slice into 12 equal sized pieces


Makes 12 servings.
