Strawberry lemon blondies

These were inspired by realizing I had lemons and strawberries I needed to use and not wanting to make a loaf. These are indulgent, sweet, and perfectly tart. They didn't come out as pretty as they probably could have, but they taste amazing.



INGREDIENTS:

For the blondie:

2.5 cups of almond flour

2/3 cup of Swerve confectioner sweetener

1 tsp baking powder

1/4 tsp salt

6 tbsp melted butter

1 large egg

1 large egg white

1 tsp fresh lemon zest

3 tbsp fresh lemon juice

0.5 tsp vanilla extract

2/3 cup chopped strawberries

For the glaze:

2 medium sized strawberries, roughly chopped

1 tbsp fresh lemon juice

2/3 cup of Swerve confectioner sweetener


DIRECTIONS:

  1. Preheat the oven to 325 degrees. Line a 9x9 inch pan with parchment paper, allowing the sides to overhang.

  2. In a large bowl, whisk together almond flour, sweetener, baking powder, and salt. Stir in melted butter, eggs, lemon zest, lemon juice, and vanilla extract until the dough comes together. Gently fold in the chopped strawberries, then transfer the dough to the prepared pan. Press evenly into the pan.

  3. Bake 30-35 minutes. Remove and allow to cool completely.

  4. Using a food processor or blender, blend together remaining strawberries and lemon juice for the glaze. Slowly wisk in the remaining Swerve confectioner sweeter until the glaze is a drizzling consistency.

  5. Drizzle glaze over the top of the blondies. Place in refrigerator for 30min to allow blondies and glaze to set. Lift parchment paper out of pan and cut into pieces. Enjoy!
