In case you are a chocolate lover and miss your donuts, here's a Cass & David approved recipe.
Ingredients:
Chocolate Donuts
0.5 cup coconut flour
0.5 cup confectioner style sweetener
1/3 cup unsweetened cocoa powder
0.5 tsp baking soda
0.5 tsp ground cinnamon
1/8 tsp salt
5 large eggs
0.5 cup unsweetened almond milk
0.5 cup/1 stick of unsalted butter, softened
1 tsp vanilla extract
Chocolate Glaze
0.75 cup heavy cream (or full-fat coconut milk)
1/3 cup confectioner style sweetener
2 oz unsweetened chocolate
1 tsp vanilla extract
Directions:
Preheat oven to 350 degrees. Grease a 6-cavity donut pan.
Combine the dry ingredients in a mixing bowl, stirring together until combined. Add the wet ingredients and use a hand mixer to combine until smooth.
Fill each donut pan about 2/3 full. Bake for 20 minutes or until toothpick inserted comes out clean. Let donuts cool in pan before you take out to glaze.
While donuts are baking, place the cream, sweetener, and chopped chocolate into a double boiler or heat-safe bowl over a pan of simmering water. Stir until chocolate is melted. Remove from heat, adding vanilla.
Dip cooled donuts into the chocolate glaze.
Store extras in airtight container for up to 3 days.
This recipe makes 6 donuts.
