These are the most delicious things. They're better tasting than the store-bought carb-conscious tortillas, and they have more protein and are filling. However, they are tricky to make - you have to spread the batter thinly to get a more tortilla-like end-product than a keto naan.
Ingredients:
3 large egg whites
2 tbsp unflavored egg white protein powder
2 oz cream cheese, at room temperature
2 tbsp coconut oil for skillet
Directions:
Whip the egg whites in a clean, dry bowl until very stiff peaks form.
Fold in protein powder until just combined.
Fold in cream cheese.
Heat the coconut oil in a skillet over medium-high heat until hot. Pour 0.25 cup of batter into the skillet and spread with spatula into a circle.
Flip and cook on other side after 1.5-2 min (both sides should be golden brown).
Can be stored in the refrigerator for 4 days or freezer for up a month.
This recipe makes 8 tortillas (although for me mine ended up being about 6 good ones).
