Keto Chicken Fried Steak w/ Sausage Gravy

This is a favorite Southern comfort staple. So imagine my desire to find a way to enjoy this on the ketogenic diet. This is filling, so make sure you plan ahead in regards to planning whether to serve this with your favorite side dish or alone (as I did!).

INGREDIENTS

Country Fried Steak

1 lb round sirloin steak (or your preferred cut) cut into 4 pieces, pounded to 1/4 inch thick

Salt and pepper to taste

0.25 cup heavy cream

2 large eggs

1.5 cups pork rinds, crushed

0.5 cup parmesan cheese, crushed

1.5 tsp onion powder

1.5 tsp garlic powder

1 tsp paprika

Pinch of cayenne

Country Sausage Gravy

2 tbsp butter

12 oz pork breakfast sausage

2/3 cup diced onion

3 cloves of garlic, minched

1.5 cups heavy cream

1 tbsp fresh parsley, chopped

0.5 tsp salt


DIRECTIONS

1. Sprinkle the steaks with salt and pepper on both sides.

2. In a shallow bowl, combine the 0.25 cup heavy cream and eggs. Whisk with fork.

3. Combine pork rinds, garlic powder, onion powder, parmesan cheese, paprika, and cayenne. Spread on a flat surface in a thin layer.

3. Dip steak into the egg wash, then dredge in the seasoned breading, coating thoroughly on both sides.

4. Heat butter in a large skillet over medium heat. Once butter is melted, add sausage (crumbled if ground, sliced if using sausage links). Cook until sausage is browned. Remove using a slotted spoon and set aside.

5. Add onion and garlic to the drippings in the pan. Reduce heat to medium low and cook until onions are translucent, stirring frequently.

6. Add cream, parsley, and salt. Increase heat and bring to boil. Reduce heat to low simmer. Once gravy thickens, add sausage back to the pan.

7. In a second large non-stick skillet, add oil (at least 0.25 inch).

8. Place the breaded steak into the hot oil and fry until crispy and golden brown, about 3 min per side.

9. Take chicken fried steak out of hot oil and place on a paper-lined tray or paper towel to rest for at least 3-5min.

10. Serve country sausage gravy over chicken fried steak.


This recipe makes 4 servings.
