Keto Blackened Shrimp & Grits

This one is one of my favorites. It perfectly mimics the texture of grits and brings me back to every time I've ordered it from one of my favorite Cajun or seafood restaurants. Definitely worth making regularly.


Ingredients:

10 oz shrimp

1.25 blackening spices

1.75 bell pepper, chopped

3 tbsp lemon-chive vinaigrette

1.5 cups cauliflower rice/“grits"

1 oz sharp cheddar cheese

1 oz cream cheese

2 tbsp almond flour


Directions:

1. Rinse shrimp and pat dry. Place in medium bowl and combine with 1 tbsp of cooking oil, blackening spices, and salt.

2. Heat 1.5 tbsp of cooking oil in a medium saute pan over medium heat. Add cauliflower grits to hot pan, seasoning with salt and pepper. Stir, cooking for 2-3 minutes.

3. Add 0.5 cup water. Stir. Cook 3-4 minutes until liquid is cooked off and cauliflower grits are tender. Remove from heat.

4. Heat 1 tbsp butter and 1.5 tbsp cooking oil in large saute pain over medium-high heat. Add shrimp and bell pepper to hot pan. Lightly season with salt and pepper. Stir. Cook 5-6 minutes or until shrimp are fully cooked and bell peppers are tender. Remove from heat.

5. Add almond flour, cream cheese, and cheddar cheese to the grits. Salt and pepper to taste. Stir until all the cream cheese and cheddar cheese are melted.

6. Divid cauliflower grits between plates. Top with blackened shrimp and bell pepper. Spoon lemon-chive vinaigrette over top to taste.
