A Gnocchi Three Way?!

This recipe takes a LOT of work. Your hands will get messy. And the portion is small, so be prepared to tell your stomach and your eyes they will disagree. I only made it with two of the sauces (pictured are with brown butter sauce and alfredo sauce), but there is a third option for sauce listed.

Ingredients:
1 cup shredded mozzarella cheese
1 cup powdered parmesan cheese
1 tsp Italian seasoning
1 tsp garlic powder
3 large egg yolks
4 cups chicken bone broth
Directions:
Preheat the oven to 350 degrees.
In a large heatproof bowl, combine mozzarella, parmesan, Italian seasoning, and garlic powder. Bake for 10 min (or microwave for 1-2 min), until cheese is completely melted. Stir well to combine. Stir in egg yolks and mix with hand mixer until smooth.
Separate into 3 dough balls. On a clean work surface, use your hands to roll each ball into a log about 0.75 in thick and 2 ft long. Use knife to cut into 0.75 in pieces.
Bring the broth to a boil in a large pot. Use a fork to make indentions on each piece of dough to resemble traditional gnocchi.
Gently drop gnocchi into the boiling broth and cook for about 1 min, until they float. Remove from pot with a slotted spoon nd place them on a paper towel-lined plate to drain briefly.
Serve with the sauce of your choice.
